Prokop Skoda
Director of Kitchen Ops
Prokop was born and raised on a family farm in the Czech Republic. After leaving his military service with UN and NATO Special Operations Units, he moved to Georgia and began his culinary career. Starting from the bottom at P.F. Chang’s as a dishwasher and prep cook, he worked his way up over 13 years to Executive Chef and eventually Culinary Director for the Southeast Market. After departing P.F. Chang’s, Prokop worked as Executive and Event Chef for Tam's Tupelo before joining TEI Hospitality as the Executive Chef of Pelicans Pete’s.
In his current role, Prokop oversees all kitchen operations throughout company, including food and labor cost, safety & compliance, cleanliness, and all standard operating procedures.
Outside of work, Prokop spends his time hiking through the Appalachia and Rocky Mountains, where he enjoys camping and small game hunting with his dog Stella. He spent his youth playing ice hockey and is a dedicated Colorado Avalanche fan.
